The sunshine has been out more often than not these last few days and the light is
staying around longer in the evenings.
So here it goes, round 18…

(R)eading: We recently gathered as a work team to share in games and pancakes before tackling the rest of a work day. It is rare to work somewhere and truly feel like you can be yourself, sport silliness and be loved in return for it. It’s the simple things that keep us close knit around here. We 100% used The Joy of Cooking by Irma S. Rombauer, for french pancake inspiration. In case you were wondering, they turned out superbly.
(E)ating: This Red Lentil Soup recipe has been tested out and consumed by most of us. It does not disappoint.
(P)laying: We have been playing around with “sneaking greens” into meals and making it fun. Here are some of our latest tricks:
- If some of your greens are starting to go bad in the fridge, pop them on to a cookie sheet and then in the freezer for future use
- Add spinach or kale into smoothies
- Add a heap of greens into just about any soup
- Making a pasta or rice bowl? Add some greens on top while the starch magic is hot, layer on other toppings and then mix it all together
- Do a quick blend of your pancake or waffle batter with some greens, it makes for a fun mix up of colors
- Add greens into your cooking of eggs or tofu
- Savory oatmeal?! Heck, yes, they will work great there, too
(O)bsessing: We have been obsessing over the Olympics! Ben Ogden and Gus Schumacher winning a silver medal together in the Men’s Team Sprint-Final?! If you haven’t already heard about it, watch the race here. It is truly one for the books.
(T)reating: We vote you treat yourself to a scoop, waffle cone or ice cream sandwich from Wild Scoops. One of our parents is a little obsessed but we won’t tell who. The shop always has a couple great vegan options, too.
